My mom visited from Japan to support taking care of our new born baby. This granola was one of her "recovery meals" she prepped for me. Its healthy, delicious, and easy to make... and I LOVED it.
Nuts can be a great source of Vitamin E, an antioxidant that is essential to keep your skin, eyes, and immune system healthy. I definitely needed that.
Ingredients:
Any dry nuts of your choice - 250g total
Almonds
Sunflower Seeds
Pumpkin Seeds
Chestnuts
Rolled oats 300g
Brown sugar 40g
Maple syrup 1/4 cup
Canola oil 1/4 cup
Egg white 1 egg
Step1:
Preheat the oven to 340℉.
Step 2:
Mix nuts and oats in a bowl.
Step 3:
In a different bowl, mix sugar, maple syrup and oil. Dissolve sugar. (put in microwave for 30 seconds if needed). Add the mixture to the first bowl.
Step 4:
Lightly beat white egg and add to the bowl.
Step 5:
Spread the granola mixture on the greased pan or use parchment paper.
Step 6:
Bake it for 30 minutes at 340℉. Make sure the granola is starting to turn to golden brown. Turn off the oven, and let it sit for one hour in the oven so granola is completely dry and crispy.
I usually use Old Fashioned Rolled Oats that buy at Whole Foods.
Sommelier tip: Although granola is a popular breakfast item, it can be a light snack to pair with your happy hour wine! It has the "toasty" and "nutty" character which pairs perfectly with red wines, such as red Bordeaux blends. Enjoy!
